  • 2 dozen corn tortillas
  • 16 ounces total, Montery Jack & cheddar cheese, shredded
  • 1 1/2 pounds ground round, chuck, or shredded beef roast.
  • 1 large onion, finely chopped
  • 3 cups enchilada sauce, red or green, canned or homemade
  • olives, green chiles and sour cream if desired

1) Brown beef & onions together till thoroughly done..
2) Add about 12 ounces of the mixed shredded cheese. Stir until melted.
3) Add 1 or 1/2 cups enchilada sauce, keeping the rest warm in pan.
4) Dip tortillas 1 or 2 at a time, in warm enchilada sauce.
5) Put 2-3 Tbsp. of beef mixture in each tortilla, roll up firmly.
6) Arrange enchiladas in 9 X 13 X 2 baking pan, lightly greased.
7) Top with remaining cheese. Bake at 350 degrees for 30-45 minutes.
