Breakfast Casserole

INGREDIENTS   (Serves 8)
  • 1 lb sausage or bacon
  • 6 eggs
  • 2 cups milk
  • 1 t salt
  • 1 tsp dry mustard
  • 6 slices bread, broken
  • 1 1/2 cups cheese, shredded
  • 4 oz mushrooms, sliced


1) Brown sausage or bacon, cool.  Crumble bacon, if used.
2) Beat eggs & milk together.  Add salt & mustard and beat again.
3) Add bread & stir until it softens.  Stir in cheese, mushrooms, sausage / and or bacon.
4) Pour into a greased 9 X 13" baking dish, refrigerate overnight.
5) Bake at 350 degrees for 40-45 minutes.  Let stand a few minutes before serving.  Increase baking time if recipe is doubled.
 

Serve with hot biscuits, fresh fruit, or pancakes / waffles !

VARIATIONS:  Add if desired:  diced green chiles, tomatoes, diced green onions, tater tots, hash browns, cubed potatoes, etc.
