"TOMATILLA SALSA"

INGREDIENTS:

  • 2 long whole green chiles, (Ortega) chopped
  • 12 tomatillos (1 lb.), coarsely chopped
  • 2 fresh Serrano chiles, cut in half
  • 1/2 cup onion, coarsely chopped
  • 1 garlic clove, minced or chopped fine
  • 1/2 cup fresh cilantro, coarsely chopped
  • 1 tsp. olive oil, NOT extra virgin
  • 1 tsp. lime juice
  • salt to taste

1) Mix together tomatillos, chopped chiles, serranos, onion, garlic & cilantro.
2) Stir in oil, lime juice, and salt until well blended.
3) Cover and chill at least one hour. Serve with tortilla chips.
4) This is also GREAT served warm over burritos !!!


"SALSA SABROSA "

INGREDIENTS:

  • 1 can chopped green chiles (Ortegas)
  • 2 Jalapeno or Serrano chiles, chopped fine
  • 4 tomatoes, chopped fine (Romas have the best flavor !)
  • 1 medium red onion, chopped fine
  • 1 Tbsp. fresh cilantro, finely chopped
  • 2 Tbsp. lime juice
  • 1 clove garlic, minced
  • 2 Tbsp. olive oil, NOT extra virgin
  • cumin & garlic powder to taste

1) Combine all ingredients.
2) Chill, allowing all flavors to blend together.


"PICO DE GALLO"

INGREDIENTS:
  • 3 medium tomatoes, firm & ripe, chopped fine
  • 3 Jalapeno or Serrano chiles, chopped fine
  • 3 green onions, chopped fine
  • 1 medium yellow onion, chopped fine
  • 3 Tbsp. fresh cilantro, finely chopped
  • salt & garlic powder to taste

1) Combine all ingredients.
2) Chill, allowing all flavors to blend together.
