"AWESOME BEAN DIPS"

"HOT CHEDDAR BEAN DIP"

INGREDIENTS:

  • 1 16 oz can pinto beans, drained & mashed
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1 can chopped green chiles (Ortegas)
  • 1/4 tsp. Tabasco sauce

1) Combine all ingredients, stir to mix well.
2) Bake at 350 degrees 30 minutes or until bubbly.
3) Makes 2 1/2 cups of dip.


"LAYERED MEXICAN DIP"

INGREDIENTS:

  • 1 16 oz can refried beans
  • 8 oz. Velveeta cheese, cubed
  • 1/4 cup sliced green onions, divided.
  • 1 cup sour cream
  • 1 cup chopped tomato
  • 1/4 tsp. garlic powder
  • 1/2 tsp. cumin

1) Mix beans, cheese, 2 Tbsp. of onions & seasonings in saucepan, stir until cheese melts.
2) Pour into 8 " square baking dish. Bake 15 minutes at 350 degrees.
3) Top with sour cream, tomatoes, & remaining green onions.
4) Serve with red, green & yellow pepper wedges & tortilla chips.
5) Makes 4 cups of dip.
