"CHICKEN ENCHILADAS"

INGREDIENTS:

  • 8-12 flour tortillas
  • 12 ounces total, Montery Jack & cheddar cheese
  • 6 chicken breasts, cooked, boned & shredded
Mix together:
  • 1 can Cream of Chicken soup
  • 1 can Cream of Celery soup
  • 1 onion, chopped fine
  • 1 4 oz. can chopped green chiles (Ortegas)
  • 2 cups sour cream


1) Combine part of sour cream mixture with chicken, add some grated cheese. 2) Grease a 9 X 12 " glass casserole dish.
3) Spread a thin layer of sour cream mixture on bottom of dish.
4) Put 2-3 Tbsp. of chicken mixture in each tortilla, roll up firmly.
5) Lay filled tortillas evenly across bottom of pan, cover with remaining sour cream misture.
6) Top with more grated cheese. Bake at 350 degrees for about 30 minutes.
